Have you heard of the barrels that Jayson Woodbridge, owner and winemaker at Hundred Acre, stashes away for 40+ months in the deepest, darkest part of the cave? Please, allow me. Instead of making the sum of his wine under one primary label, Jayson finds profound joy in making small lots from calculated experimentations in the cellar. It seems he always has a little something cooking for us, or more precisely, the ones who act quickly, for his cellar inventions do garner a following like few others that we know. He calls these jewels of the cellar “Deep Time” and labels them as such. He states in his own, potent words that the “wine is never available to a restaurant, 3 Michelin Stars or not, will rarely be seen even by the most avid collectors, and hidden by the smart ones. It can only be described by me as singular in its beauty. It is not better than other Hundred Acre wines it is different in a way that only age and a micro selection made for my personal happiness to be loved, can be.”
